The Best EVER Chili Recipe
In my opinion
I have been making this chili recipe for over twenty years. My family and friends love it and often ask for the recipe or for me to make it for them. My husband would say this is not chili at all, he calls it bean soup...we ignore that
(to bean or not to bean)

Ingredients:
-
2 lbs lean ground beef (you can sub ground turkey)
-
1 large onion diced
-
4 cloves crushed garlic
-
1 diced jalapeno diced (optional)
-
2 cans red kidney beans
-
2 cans pinto beans
-
1 can chili beans
-
1 can white corn
-
1 can white hominy
-
1 can yellow hominy
-
2 cans Rotel
-
1 can diced green chilis
-
1 tsp. onion powder
-
1 tsp. garlic salt
-
1 tsp each salt and black pepper
-
1 package ranch dressing mix
-
1 package taco seasoning mix
Directions:
Dice the onion, garlic and jalapeno
Saute the onion for 2-3 minutes seasoned with salt and pepper, add the jalapeno and saute another 2 minutes, add the garlic, cook 1 more minute.
Add the ground beef seasoned with the garlic salt, onion powder, and salt and pepper. crumble and completely brown the meat.
In a large pot or crock pot, combine all of the canned ingredients. I do not drain or rinse them, I dump the entire can in the pot. Add the meat/onion mixture to the pot, top with the ranch and taco seasoning and stir well. If cooking in a pot on the stove bring it to a boil then reduce and simmer on low for at least 35 minutes, the longer the better. If cooking in a crockpot cook on low all day or on high for 2-3 hours.
Topping Suggestions:
Cilantro
Shredded cheese
Avocado
Chips
Oyster crackers
Cornbread
