4-5 chicken breast pounded flat

1-2 Large Tomatoes Sliced

4 oz. Basil (store bought works, but if you have the time make your own)

sliced buffalo Mozzarella

5 slices of prosciutto
-
1 tsp. garlic salt
-
1 1/2 tsp. Italian Seasoning - I used lightly dried Italian herbs
-
salt and pepper
Directions:
Preheat the Oven to 375
In a large ziploc bag pound the chicken breasts flat
Spray a 9x13 baking pan with oil (I use Avocado cooking spray)
Season the chicken with the dried spices
Slice the tomatoes and season with salt and pepper
Spoon the pesto onto the top of each chicken breast and make a thin layer
Bake for 20 minutes, remove from the oven and top with the prosciutto, tomatoes and cheese and put back in the oven for another 15-20 minutes.
I like to serve this with sautéed spinach.
