Pura Vida View

Pistachio Crusted Chicken is so good and can be served in many different ways, pictured here I served it with sweet and savory quinoa. We also enjoy it over pasta, a fresh arugula salad, or just by itself as an appetizer. This is a super easy and healthy way to spruce up chicken and there are many different delicious ways to crust the chicken, I have listed two of my favorite here:

Ingredients:

3/4 cups shelled pistachios

3/4 cups Italian Panko bread crumbs

chicken tenderloins

3 tbsp. honey mustard

1 tbsp. honey
-
1 tsp. soy sauce
Instructions:

Preheat the oven to 400 degrees.

Place the pistachios in a food processor and pulse until they are crumbles but not a paste

Combine the honey, soy sauce and honey mustard

Pat the chicken dry and coat it with the honey mustard sauce

coat the chicken with the pistachio bread crumb mixture

Place on a cookie sheet lined with parchment paper or coated with cooking spray

Bake 20-25 minutes or until cooked through

Want to make these with less carbs?
Skip the bread crumbs, honey and soy sauce
Prepare the same as above, but after you coat with the honey mustard and pistachios, place them on the cooking sheet, spray them with olive oil and place in the refrigerator for 30 minutes to an hour so the coating sets. Then bake.
