Spicy Green Rice with Chicken

This dish was created out of what I called operation clean out the refrigerator.  It ended up being so good I snapped this picture and wrote down how I created it so we could enjoy it again.  I often throw together dinner and then cannot remember later how to exactly recreate it.  My mom makes a rice dish that we call green rice and it's a family favorite.  This tasted similar but has chicken in it, which hers does not and it also is quite a bit healthier.  She uses white rice and pepper jack Velveeta in her recipe...it's so good, but     a special occasion kind of dish.  I use brown rice and laughing cow low calorie cheese in this to give it some creaminess, the spice comes from fresh jalapeno and slap ya mama seasoning.

  • 1 white onion diced

  • 1 diced red bell pepper

  • 2 cloves crushed garlic

  • 2 diced fresh jalapenos

  • 2 tsp. olive oil

  • 1 tsp butter

  • 4 cups chicken broth

  • 1/2 tsp. Sauza Goya 

  • 1/4 tsp. slap yo mama

  • 1 tsp. onion powder

  • 1/2 tsp. garlic salt

  • 1 1/2 cups brown rice

  • 6 wedges of light creamy laughing cow cheese (if you can find it and want even more spice you can use creamy spicy pepper jack laughing cow cheese)  **another option I may try is boursin garlic and herb cheese** 

  • 1 1/2 cups chopped broccoli 

  • 2 lbs. cubed chicken

In a medium sauce pan place 1 tsp. olive oil and 1/2 tsp. butter and melt it, add the rice and stir into the butter and oil, toasting for a minute or so then add the broth.  Bring to a boil then cover and reduce heat to simmer.

While the rice is cooking, dice the onion, garlic, bell pepper, jalapeno, broccoli and chicken.

In a large deep frying pan add 1 tsp olive oil and 1/2 tsp. butter and the onion.  Season with salt and pepper and sauté for about 2 minutes until translucent, add the red bell pepper and jalapeno, season with salt and pepper and sauté for another minute or two, add the garlic.  Next add the chicken and sauté with the vegetables about 7 minutes, stirring a few times.  Add the broccoli and mix well.  Sauté for another few minutes stirring often.  Cover and reduce heat so that the broccoli steams and gets very soft (you want it to fall apart when mixed with the rice).  Add the cheese melt and mix thoroughly

When the rice is ready add it to the chicken and vegetable pan and mix well cook another few minutes stirring a couple of times.

You can top with fresh cilantro or Italian parsley.
