Conch
Conch is served many different ways and you will find it on most menus. We tried it as ceviche, conch fritters and fingers. It's tasty and an island favorite because its so prevalent in the water surrounding the islands.

Hominy
Hominy is a popular dish on the island because they grow maize on the island and then dry and process is to make hominy. It's often served as grits or Johnny cakes.

Johnny Cakes
Johnny cakes are very popular on the island. Often served with boiled fish as a sandwich, or even on their own. The recipe is very simple, just cornmeal (maize), salt and water. It's worked into a batter and cooked in a skillet with hot oil.

Rice and Peas (beans)
Rice and peas (beans) are a popular and delicious accompaniment to many dishes.

Caribbean Lobster
During Lobster Season (August - March) lobster is very popular on most menus.

Lionfish
Lionfish is beautiful to look at, but it is a major nuisance to the reef system with it's aggressive nature and ravenous appetite. In order to control their population the local government sells hunting permits to visitors and residents. It's the only fish species that is legally spearfished. You will find it on many menus.

Crab and Rice
The Blue Crab is found throughout the islands, crab and rice is a popular dish at most local restaurants.
