Pura Vida View

Ingredients:​

1 medium diced yellow onion

1-2 tbsp olive oil
-
2-3 tbsp minced garlic
-
1 and ½ 32 oz boxes of chicken broth (I use organic)

1 (7 oz) can diced green chilies
-
1 ½ tsp cumin
-
½ tsp paprika
-
½ tsp dried oregano
-
½ tsp. coriander
-
¼ tsp. cayenne pepper
-
1 tsp. salt
-
1 ½ tsp black pepper (I sometimes also add ghost pepper)

1 can white corn
-
1 can cannellini beans
-
1 can great northern beans
-
2 ½ cups diced store bought rotisserie chicken (or you can cook your own)
Instructions:

In a large pot over medium heat. Sauté onion in the olive oil until soft and translucent. Add garlic and sauté another minute or two.

Add the green chilies and spices and saute for another minute or two stirring continuously

Add the broth and bring to a boil

Reduce the heat to simmer for 10-15 minutes

Drain and rinse the beans and put half of the them in a food processor with ¼ cup of chicken broth (the pureed beans add a cream texture to the soup without adding cream)

Add the corn, whole beans, pureed beans, and diced/shredded chicken to the soup mixture and stir well. Simmer for 10-15 minutes more.

Top with whatever you enjoy: (fresh lime juice, cilantro, avocado slices, tortilla chips, jack cheese, etc.)
