As Spring is in full swing and it's getting warmer outside, we are ready to light up our grill and enjoy our outdoor space. I love to marinate meat when I grill it, and I love to use a citrus marinade. This marinade is easy, fast and perfect for both chicken and steak or even shrimp.

Ingredients:
1/2 to 1 white onion chopped
3 cloves crushed garlic
zest and juice of one large orange
zest and juice of one large lemon
3-4 springs of fresh thyme
1 tsp. marjoram
2 tsp. lemon pepper seasoning
2 tsp. garlic salt
2 tsp. black pepper
1-2 tbsp. Siracha (optional)
1/2 cup olive oil

Directions:
chop the onion and put in a large mixing bowl
crush the garlic and add to the bowl
use a zester to zest the orange and lemon into the bowl
cut the orange and lemon into quarters and squeeze the juice into the bowl
add the leaves of the Thyme
add the marjoram
add the Siracha (if using)
add the olive oil to the bowl
season the meat with the lemon pepper, garlic salt, black pepper
Place the meat in a large zip lock bag and pour the marinade into the bag.
Place in fridge at a minimum of 2 hours, overnight is best

Make Shish Kabobs
Slice one red bell pepper, 1 large zucchini, 1 large yellow squash, 1 large onion into bite size pieces. Cube the meat you are using and alternate the meat with the veggies on a stick.
